Why not send the Iranian pipeline direct to Turkey?  That completely avoids Iraq and Syria which I would assume are far less stable.

Iran is not that important for China since they have Saudi Arabia. It is just on eof Persian Gulf rich oil countries. Of course China evades all US sanctions (US sanctions are for sisses and China is not vs US) and imports all of Iran oil at bargain prices. But the same is with Russian oil, even cheaper and India and China pump in as much as possible.
